Sodium Stearoyl Lactylate (SSL)
Sodium stearoyl lactylate, CAS No. 25383-99-7, is a type of emulsifier E481, appearing as white to light yellow powder with a slight special smell. It is soluble in hot oils and organic solvents such as ethanol, and is hardly soluble in water. SSL is a relatively stable compound that can remain stable within a certain temperature and pH range.
Applications:
As a food additive, Sodium Stearoyl Lactylate (SSL) is used in bread, steamed buns, noodles, dumplings and other flour products. It has the functions of strengthening, emulsifying, anti-aging and softening, and can increase the toughness and volume of dough. It is used in prepared milk, ice cream, jam, and candies to improve the emulsification stability. In other food applications, it has the functions of making it easier to demould, preventing food from aging, extending the preservation time, and preventing surface cracking of frozen food.
SSL is used as an emulsifier, dispersant, and lubricant in the field of personal care products. It has excellent moisturizing, emollient and fat-adding properties. It don't have greasy feeling, and can improve the greasy feeling caused by mineral oil.
