Sodium erythorbate, CAS NO. is: 6381-77-7, is white to yellow-white crystals or crystal powder, odorless and slightly salty. The dry state is quite stable in the air, but in aqueous solution, when exposed to air, metal, heat, and light, it is easily oxidized and soluble in water, and almost insoluble in ethanol. The antioxidant properties of sodium erythorbate are the same as those of erythorbic acid.
Sodium erythorbate E316 is a new type of biological food antioxidant, antiseptic and fresh-keeping color aid. It can prevent the formation of carcinogens - nitrosamines in pickled products, and eradicate undesirable phenomena such as discoloration, odor and turbidity of food and beverages.
