Potassium citrate, CAS NO.: 866-84-2, is an organic compound and a white crystalline powder, it is easily soluble in water and glycerol, insoluble in ethanol and odorless. Potassium citrate is acidic and exhibits an acidic reaction in aqueous solution and can decompose at higher temperatures and release oxygen. It is relatively stable in the air, but may absorb moisture in humid environments.
Food grade: As a food additive, potassium citrate E332 has the functions of preservative, buffering, chelating, stabilizing, antioxidant, emulsifying, adjusting acidity and supplementing potassium salt. It can be used in dairy products, jelly, jam, meat, canned water , snacks, emulsification of cheese, and preservation of citrus.
Pharmaceutical grade: Potassium citrate BP can be used as a pharmaceutical excipient in medicine to treat hypokalemia, potassium deficiency, alkalize urine, and control kidney stones and uric acid.
