Tetrasodium Pyrophosphate (TSPP)
Tetrasodium pyrophosphate, CAS No. is 7722-88-5, is white powder or crystal. Soluble in water, insoluble in alcohol, and easy to deliquesce. The solubility in water is different at different temperatures. Aqueous solutions are relatively stable at 70°C. Its aqueous solution is alkaline.
Applications:
Tetrasodium pyrophosphate powder has the properties of chelating metal ions, water-holding, buffering PH, stabilizing, emulsifying, thickening, preventing oxidation. Adding tetrasodium pyrophosphate food grade to canned food, juice drinks, and dairy products can be used for quality improvement. It can also improve the gel strength and tenderness of meat products and soy product. Additionally, it works with other phosphates found in seafood to increase water retention.
In addition, TSPP can prevent the formation of dental calculus by reducing the deposition of calcium and magnesium on the teeth. Therefore, it is commonly used in many tartar control toothpastes and mouthwashes.
